STRAWBERRY-SHORTCAKE MONKEY BREAD



Prep Time: 15 Min
Total Time: 30 Min
Makes: 6 servings


INGREDIENTS

1
 can Pillsbury® Grands!® Flaky Layers refrigerated biscuits
10
 tablespoons butter
1 1/2
 cups sugar
2
 to 3 teaspoons grated lemon peel (1 medium)
3
 tablespoons fresh lemon juice (1 medium)
1
 pint (2 cups) fresh strawberries, sliced, tossed with 1 tablespoon sugar
6
 scoops vanilla bean ice cream

DIRECTIONS

1 Heat oven to 375°F. Lightly spray 6 mini fluted tube cake pans or regular-size muffin cups with cooking spray. 2 Separate dough into 8 biscuits; cut each into quarters. In small microwavable bowl, microwave 3 tablespoons of the butter on High until melted. In second small bowl, mix 1/2 cup of the sugar and the lemon peel. 3 Dip each biscuit piece into butter; coat each with sugar mixture. Divide biscuit pieces evenly among pans. 4 In 1-quart saucepan, mix remaining 7 tablespoons butter, remaining 1 cup sugar and the lemon juice. Heat to boiling over medium-high heat. Drizzle lemon syrup evenly over biscuit pieces in each pan. 5 Bake 11 to 15 minutes or until dark golden brown. Invert breads onto cooling rack. Serve immediately with strawberries and ice cream.
Get Creamy! Looking to lower the calories in this treat? Rather than serving it with ice cream, serve it will a dollop of fat-free whipped cream.
Berry Nice! Substitute fresh or frozen raspberries, blueberries or blackberries in this recipe for a truly delicious treat!

Banana Cream Pie in a bowl
INGRIDENTS
 
1 cup Gold Medal® all-purpose flour
1/4 cup packed brown sugar
1/2  cup firm butter or margarine
1/2 cup peanuts
1 box (4-serving size) banana instant pudding and pie filling mix
2 cups cold milk
3 ripe medium bananas, sliced
1 container (8 oz) frozen whipped topping, thawed

  • 1 Heat oven to 400°F. In medium bowl, mix flour and brown sugar. Cut in butter, using pastry blender, until mixture is crumbly. Stir in peanuts. Press evenly on bottom of ungreased 9-inch square pan. Bake about 15 minutes or until light brown. Stir to break up. Cool completely, about 1 hour.
  • 2 In large bowl, make pudding mix as directed on box, using 2 cups milk. In 2-quart serving bowl, layer half of the crumb mixture, pudding, bananas and whipped topping; repeat layers. Cover and refrigerate at least 4 hours. Top with additional peanuts if desired. Store in refrigerator.

  • Banana Cream Pie-in-a-Bowl

Wraps
1 pkg. flour tortillas
1 bag of shredded cheese (co-jack or similar)
1 green onion (chopped into tiny pieces)
1 small container of sour cream
1 green bell pepper (chopped into tiny pieces)
1 jalapeno pepper (chopped into tiny pieces)

  Combine sour cream, peppers, small amount of onion, and shredded cheese in a bowl.  Lay your tortilla out and spread the mixture onto the tortilla.  Roll and then cut into rolls.  Place in fridge until ready to enjoy...this part never takes long at my house.

Wondering what to do with those over ripe bananas.  Never fear...Bisquick is here!  Use this simple recipe using Bisquick to make delicious banana bread.  Also these can be vacuum sealed and frozen for a later date. 


Banana Nut Bread

1 C. Sugar
1/4 C. shortening
2 Bananas
2 eggs (beaten)
2 Cups Bisquick
1/4 C. walnuts (optional)

  Cream the sugar and shortening in a bowl.  Add the eggs and bananas, mix well.  Add Bisquick and stir well.  Mix in the walnuts if desired.  Put into two small greased and floured loaf pans and bake at 350 degrees for 45 minutes.  Enjoy!

Chicken & Sausage Gumbo

1 medium onion chopped
3 Links of Italian Sausage with peppers and onions (diced)
1 1/2 cups long grain white rice
2 T. olive oil
1 (16 oz.) bag of frozen veggies (okra, corn, onion, celery, and bell peppers)
1/2 tsp. creole seasoning
1 (32 oz.) low sodium chicken broth
10 oz. of cooked chicken pieces
1 tsp. low sodium worcestershire sauce
2 (10 oz.) cans of milder died tomatoes with green chilies undrained
2 tsp. browning sauce
12 oz. peeled deveined medium shrimp (optional)

  Prepare rice.  Preheat saucepan and add the oil and then the sausage.  Stir and cook for a few minutes.  Add onions, bag of veggies, and creole seasoning and cook 1 minute.  Sprinkle flour and stir.  Add the chicken broth and bring to a boil.  Reduce heat to a simmer and add chicken pieces, browning sauce, tomatoes w/ chilies and worcestershire sauce.  Simmer for 10 minutes.  Serve over rice.  Enjoy!
