Tasty Tuesday

Chicken & Sausage Gumbo

1 medium onion chopped
3 Links of Italian Sausage with peppers and onions (diced)
1 1/2 cups long grain white rice
2 T. olive oil
1 (16 oz.) bag of frozen veggies (okra, corn, onion, celery, and bell peppers)
1/2 tsp. creole seasoning
1/2 cup all purpose flour
1 (32 oz.) low sodium chicken broth
10 oz. of cooked chicken pieces
1 tsp. low sodium worcestershire sauce
2 (10 oz.) cans of milder died tomatoes with green chilies undrained
2 tsp. browning sauce
12 oz. peeled deveined medium shrimp (optional)

  Prepare rice.  Preheat saucepan and add the oil and then the sausage.  Stir and cook for a few minutes.  Add onions, bag of veggies, and creole seasoning and cook 1 minute.  Sprinkle flower and stir.  Add the chicken broth and bring to a boil.  Reduce heat to a simmer and add chicken pieces, browning sauce, tomatoes w/ chilies and worcestershire sauce.  Simmer for 10 minutes.  Serve over rice.  Enjoy!
